Green Peas are premium whole dried peas (Pisum sativum), one of the oldest crops cultivated by human beings; archaeological evidence suggests pea cultivation in the Middle East more than 9,000 years ago. Green peas are now cultivated throughout the northern belt of India. This whole dried pulse is coloured and naturally sweet, and for one simple reason: it provides a tremendous nutritional profile at little cost.
In Hindi, green peas are known as Matar, and it is a winter crop mainly cultivated in Uttar Pradesh, Madhya Pradesh, Punjab and Himachal Pradesh. The whole, dried form of garden pea is a shelf-stable pulse that is more concentrated in protein, fiber, and minerals than fresh garden peas and can be used year-round for cooking. As a result of its natural iron and zinc content and relatively low phytic acid, all minerals are more easily absorbed by the body, but it is a useful source of protein and is especially rich in natural lysine and tryptophan.
