Moth Bean is a premium whole moth bean (Vigna aconitifolia), commonly known as Matki in North and West India, one of the most drought-resistant and nutritionally efficient pulses grown on the Indian subcontinent. This has been quietly powering some of Rajasthan's harshest and driest farmlands for generations, surviving on as little as 200- 300 mm of rainfall a year where most crops would fail.

Also known as Matki, Math, Mat Bean, Dew Bean and Turkish Gram, and referenced in Ayurvedic texts as Makushta, Moth Bean is most famously the star ingredient of Maharashtra's beloved misal pav, as well as matki usal, a traditional sprouted bean curry eaten across Western India. Moth Bean (Vigna aconitifolia) is one of the highest-protein-to-weight-ratio Indian pulses, with about 23g of protein and 343 calories per 100g in raw form, and is a significant source of calcium and phosphorus to promote bone strength and prevent osteoporosis. It is also known for its high levels of folate, thiamine and other B vitamins that help with energy metabolism, as well as polyphenols such as caffeic acid, cinnamic acid and ferulic acid that have potent antioxidant properties.
