Chori White is a premium white cowpea (Vigna unguiculata) variety, which has been introduced into the Indian subcontinent from Africa around 2000-3500 years ago and is widely used in Gujarati and Maharashtrian kitchens. Chori White is not a novelty variety, but is reliable, smooth-skinned, cream coloured and mild in flavour.
Vigna unguiculata, commonly referred to as White Cowpea or Black-Eyed Pea (a close relative), is a drought-tolerant leguminous grain that provides about 23.5g protein per 100g and has a significant amount of folate, thiamine, copper and iron. Protein content varies in cowpea from 19 to 28%, and the cowpea has high TDF (total dietary fiber) content, which makes it a good source of plant protein for vegetarian households. The amino acid composition is especially complementary to cereal grains, making it very suitable for use in combination with cereal grain-based staples in the regions from which it is cultivated.
