Angur Poha is parboiled rice that has been flattened and dried-a centuries-old processing technique that transforms everyday rice into light, dry flakes that rehydrate almost instantly. This mechanical transformation is what makes poha so different from regular rice: 20 minutes of cooking time are replaced by a quick rinse under water to soften it totally, which is exactly why it has become one of India's fastest and most reliable breakfasts.

Poha, as it is called in Hindi-speaking India, Pauwa in Gujarat, Aval in Tamil Nadu and Kerala, and Atukulu in Andhra Pradesh, this flattened rice has a different identity in almost every region, relished and tempered with mustard seeds and curry leaves in Maharashtra's iconic Kanda Poha, sweetened with jaggery and coconut in Kerala's Aval Payasam, or layered into the spiced South Indian snack Aval Upma. It is light and airy, so it takes on whatever flavour it is cooked with, but remains fluffy, not sticky or starchy, because of the way it is pressed so thin during processing.
