Toor Whole is premium whole pigeon pea with the outer skin intact, unlike the split, dehusked Toor Dal most Indian kitchens know better. And that intact husk is exactly what gives it a denser bite, deeper flavour and significantly more fibre than the split variety. Whole toor is widely grown throughout India, hardly ever taking center stage as Toor Dal does, but it's long been the quiet ingredient behind sprouted preparations and slow-cooked, rustic regional dishes.

Whole toor is rich in plant protein and naturally low in glycemic index in Indian cuisine, helping to keep blood sugar levels more stable over a meal. It is called Sabut Toor in Hindi, Akhi Tuvar in Gujarati, Muzhu Thuvarai in Tamil, and Purthi Kandi in Telugu. The protein density is almost as high as the split variety at around 21-22g of protein per 100g raw. The retained husk adds extra fibre and a firmer structure which holds up particularly well to soaking, sprouting and the long, slow cooking that whole pulses are built for.
