The premium form of red lentil (Lens culinaris), masoor whole, is split masoor dal with the outer skin on, giving it an earthy flavour, firmer bite and slightly higher fibre content, compared to split masoor dal due to the presence of the outer skin. Small, brown-skinned on the outside and orange inside, the whole masoor has been grown on the Indian subcontinent and Mediterranean region for thousands of years, prized not just for its nutritional value, but also because of its versatility.
