Kala Chana is premium whole black chickpea, valued for its firm, earthy bite that comes from eating it whole and unrefined, unlike its split cousin. Grown in India's dry interior, kala chana has deep cultural import. It's the chickpea of fasting days and festivals, showing up in everything from spiced roadside chaat to the tempered Sundal of South Indian temple kitchens.
Kala chana is unusual in Indian cooking in that it combines high protein with very high fibre and one of the lowest glycemic indices of any common pulse. This rare trio makes kala chana especially valuable for blood sugar management. It is known as Kala Chana in Hindi and Gujarati, Karuppu Kadalai in Tamil, and Nalla Senagalu in Telugu. It contains 20–22g of protein per 100g raw and more than 17g of fibre, so it encourages digestion that lasts and a slower release of energy than most pulses. It has a firm structure that allows it to retain its shape through curries, sprouting, and long soaking qualities that lighter, split dals simply cannot match.
